Scope note: Género de bacterias gramnegativas, anaerobias facultativas, con forma bacilar, que en principio no son patógenos para el hombre, los animales o las plantas. Los microorganismos de este género son dañinos para la cerveza y la sidra, y en las sidras inglesas dulces producen una fermentación secundaria conocida como enfermedad de la sidra. La especie Z. mobilis se usa en experimentos en estudios de genética molecular.
