Scope note: Sal de sodio del ácido nitroso. Se utiliza en muchos procesos industriales, en la conservación, coloración y curación de las carnes y como reactivo en las TÉCNICAS DE QUIMICA ANALÍTICA. Terapéuticamente se emplea como antídoto en la intoxicación por cianuro. El compuesto es tóxico y mutagénico y reacciona in vivo con aminas secundarias y terciarias produciendo nitrosaminas altamente carcinógenas.
