Scope note: Grupo heterogéneo de compuestos derivados de reordenaciones, oxidación y reacciones de entrecruzamiento que proceden de la glicación no enzimática de grupos amino en PROTEÍNAS, LÍPIDOS o ÁCIDOS NUCLEICOS. Su acumulación in vivo se acelera en condiciones hiperglucémicas, oxidativas o inflamatorias. El calor también acelera la formación de productos finales de la glicación avanzada, como demuestra la coloración parda que adquieren los alimentos al cocinarlos.
