Scope note: Enzima que cataliza la síntesis de piroglutamato a partir de un gamma-glutamil-aminoácido, liberando también el aminoácido libre. La enzima actúa en derivados de glutamato, 2-aminobutirato, alanina y glicina. Se ha propuesto que la enzima pudiera intervenir en un ciclo del gamma-glutamilo para el transporte de aminoácidos al interior de las células en el intestino. EC 2.3.2.4.
