La lecitina es un componente de la MEMBRANA CELULAR y se obtiene con fines comerciales a partir de la SOJA y la YEMA DE HUEVO. Sus propiedades emulsificantes y tensoactivas son útiles para su empleo como ADITIVOS ALIMENTARIOS y para producir geles orgánicos (GELES).
