Scope note: Gliceril ésteres de un ácido graso, o de una mezcla de ácidos grasos. Son generalmente inodoros, incoloros e insípidos si son puros pero pueden tener algún sabor dependiendo de su origen. Las grasas son insolubles en agua y solubles en la mayoría de los disolventes orgánicos. Existen en los tejidos animales y vegetales y se obtienen generalmente por ebullición o por extracción bajo presión. Son importantes en la alimentación (GRASAS DE LA DIETA) como fuente de energía.
