Gliceril ésteres de un ácido graso, o de una mezcla de ácidos grasos. Son generalmente inodoros, incoloros e insípidos si son puros pero pueden tener algún sabor dependiendo de su origen. Las grasas son insolubles en agua y solubles en la mayoría de los disolventes orgánicos. Existen en los tejidos animales y vegetales y se obtienen generalmente por ebullición o por extracción bajo presión. Son importantes en la alimentación (GRASAS DE LA DIETA) como fuente de energía. Fats are insoluble in water, soluble in most organic solvents. They occur in animal and vegetable tissue and are generally obtained by boiling or by extraction under pressure.
